I know it's a New Year and you're probably going strong on your resolutions. So please forgive me right now if I'm tempting you beyond what you are able to deal with ... warning, sweet treats ahead! I just had to share some photos of these delicious cupcakes my family and I enjoyed this weekend.
My good friend Anita baked these precious little treats in her charming shop. Her gift shop and bakery is called "Bella" located in Lake Havasu, Arizona. The bakery side of the store is brand new!!

It was such a nice surprise to find some scrumptious cupcakes delivered by my parents back from their trip to Arizona.

I love walking into a home with something yummy baking in the oven.
This past week I made my favorite Pumpkin muffins for family and my husband's co-workers.
The muffins seem to disappear very quickly and that is always a good sign. Right?!
Thanksgiving is approaching quickly~~~ this recipe will win over your guests and make a great addition for the holiday.
Add a creative touch with a little ribbon tied around the muffin.
You may have seen this recipe last year when I posted, but in case you missed it here it is again!
If you love the flavor of Pumpkin ~~~ you will enjoy this recipe.
Chocolate Chip Pumpkin Muffins
3 cups all purpose flour
2 cups granulated sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 15 oz canned pumpkin
1-2 cups chocolate chips
4 eggs
1 1/2 cup oil
1 teaspoon salt
1 teaspoon ground cinnamon
Mix all together in a large bowl
Pre heat oven 400 degrees
Bake for 16-20 minutes
Makes 24 + muffins
ENJOY!

Hi Friends!
Do you love cupcakes? I sure do, but my waistline doesn't. I have a solution for a guilt free cupcake treat!
OK here it is! One box of cake mix and a 12oz. can of Diet Coke, mix these two ingredients together, do not add eggs, oil, butter or water. Then bake just like the directions tell you on the box.
One diet coke cupcake with a spoonful of Cool Whip "lite" is less than 100 calories (3 points on Weight Watchers).
You can also try a white cake mix with one12oz. can of sugar free Cherry 7up. The cupcakes come out of the oven fluffy, taste good and have a lot less calories.
I am trying to make some healthy changes in 2010 and these cupcakes will really help curve my sweet tooth! Maybe yours too?!

Do you like to bake? I seemed to enjoy baking in the winter and around the holidays.
You may laugh but I am a late night baker. I guess I do it because my house is quiet and I have no distractions. I even drove to the grocery store last night to buy vanilla at 10:30 pm...and guess what? The store was quiet too!
I do have one funny story when I was baking around midnight and I mixed up my flour amount to one teaspoon and the salt amount to 2 1/3 cups! Oh my goodness they were terrible!!Play-dough cookies!
My all time favorite cookies to bake are my Grandma Ruth's chocolate chip cookies. Her ingredients are almost identical to the nestle recipe but she does add one extra ingredient...
Ruth's Chocolate Chip Cookies
2 1/3 cup flour
3/4 cup brown sugar
3/4 cup white granulated sugar
2 full sticks of soft butter
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
2 eggs
2 tablespoons hot brewed coffee "secret ingredient"
1 bag of semi sweet or milk chocolate chips
Oven set to 350-375
Bake on a non stick cookie sheet
9-12 minutes
Enjoy!

Now that it is October and the weather is cooling down I am ready to bake! You too?
Time to share a recipe with you all!
Here is a favorite pumpkin muffin recipe I enjoy making during the Fall Season...
