Boy, I am ready for both!
I seem to be a seasonal baker. Cooler temps come and I am ready to turn on the oven and bake away!

Let's start with baking~~~
A fresh baked carrot cake has been a favorite memory and taste of Fall as far back as I can remember. My Grandma Ruth seemed to always have a scrumptious carrot cake ready for us to sample when the summer season ended and a new school year began.
Carrot Cake Recipe
2 cups all purpose flour
2 tsp. baking soda
2tsp. baking powder
1/2 tsp. salt
3 tsp. ground cinnamon
1/2 tsp. nutmeg
4 eggs
1 1/4 cup of oil
1 cup granulated sugar
1 cup brown sugar
2 tsp. Vanilla
3 cups grated carrots
1 cup of nuts (pecans or walnuts)
1 cup raisins
Preheat oven to 325 degrees, I like to make the tradition shape cake using two 9" pans.
Mix dry ingredients flour, baking soda, baking powder, salt, cinnamon and nutmeg
In a separate bowl whisk together your eggs, oil, both sugars and vanilla for 1 minute
Combined dry and wet mixture, mix together for two minutes
Fold in carrots, nuts and raisins last.
Pour in pans and baked for aprox 45-50 minutes.
Frosting
8 oz. cream cheese softened
1/2 stick of butter softened
1 1/2 cups of powdered sugar
1 teaspoon of vanilla
1/4 Cup of flaked coconut, toasted
Blend together for desired thickness
BAKE & ENJOY!
